Vibrant Zucchini Garden Sauté with Apples
Ingredients:
- 1-2 tablespoons extra virgin olive oil
- 1 large onion or 2 small shallots
- 2 garlic cloves
- 1 large Hungarian chili pepper, deseeded (or sub any mild pepper)
- 1 large radish
- ½ large zucchini cut into halves
- 3 cups kale/collards
- ½ cup raw pumpkin seeds
- Lemon juice from 1 large lemon
- 1 apple, sliced thin (Golden Delicious if you can find it!)
Instructions:
- Heat a large skillet with the olive oil over medium heat.
- Add the onion, garlic, Hungarian chili pepper, and chopped radish to the skillet. Sauté until the onions start turning translucent.
- Once the onions have turned, add the zucchini, apples, and lemon juice. Sauté for 4-5 minutes. Add the apples and pumpkin seeds and the kale/greens. Cover the skillet for about 5 minutes until the greens are wilted.
- Once the greens are wilted, turn off heat and enjoy!
Notes/Customization:
- This is a bit of a weird combo, but it works! The apple plays well into making this a very light, refreshing dish that satisfies the sugar cravings.
