Red Cabbage and Carrot Slaw
Ingredients:
- ½ Large Red Cabbage – cut into slices
- 6 medium carrots – peeled and cut into very thin strips – almost grated size
- ⅓ cup olive oil
- 2 cloves garlic – minced
- Lime zest from 2 limes
- Lime juice from 2 limes
- Pinch of honey
- Salt to taste
- Bunch of cilantro
Instructions:
- In a large bowl, combine all the ingredients except cilantro.
- Use a fix or spatula to mix all the ingredients together.
- Place the bowl in the fridge and let sit for about 2 hours before serving.
- When it is ready to serve, add the chopped cilantro and mix around for that extra vibrant flavor.
Notes/Customization:
- This recipe is amazing as is or on tacos, in a power bowl, on salads. It doesn’t really matter. It’s nutritious, light, and refreshing and so, so versatile.
- It lasts for about three days in the fridge so we also make smaller batches to keep it fresh. Takes no more than 20 minutes to make.
- Be sure to leave the cilantro until you are ready to serve!
