Red Cabbage and Carrot Slaw

Ingredients:

  1. ½ Large Red Cabbage – cut into slices
  2. 6 medium carrots – peeled and cut into very thin strips – almost grated size
  3. ⅓ cup olive oil
  4. 2 cloves garlic – minced
  5. Lime zest from 2 limes
  6. Lime juice from 2 limes
  7. Pinch of honey
  8. Salt to taste
  9. Bunch of cilantro

Instructions:

  1. In a large bowl, combine all the ingredients except cilantro.
  2. Use a fix or spatula to mix all the ingredients together.
  3. Place the bowl in the fridge and let sit for about 2 hours before serving.
  4. When it is ready to serve, add the chopped cilantro and mix around for that extra vibrant flavor.

Notes/Customization:

  1. This recipe is amazing as is or on tacos, in a power bowl, on salads. It doesn’t really matter. It’s nutritious, light, and refreshing and so, so versatile.
  2. It lasts for about three days in the fridge so we also make smaller batches to keep it fresh. Takes no more than 20 minutes to make.
  3. Be sure to leave the cilantro until you are ready to serve!
